Ingredients
3 cup garden vegetable mix, thawed
1 qt vegetable juice cocktail
1/2 tsp seasoned pepper
3/4 tsp salt
2/3 cup alphabet macaroni
1 cup potatoes, peeled & cubed
1 cup cooked beef or chicken (opt. cubed
Directions
In a large saucepan, combine Garden Vegetable mix, vegetable juice
cocktail, seasoned pepper and salt. Bring to a boil. Add alphabet
macaroni and potatoes. Reduce haet to medium. Cook uncovered about 12
to 15 minutes., until macaroni and potatoes are tender.
Other shapes of pasta may be used (i.e. broken spaghetti), and
leftover potatoes, cubed, can be used in place of raw; add them 5
minutes before soup is done. Leftover cubed chicken or beef is also
good in this.

The Glycaemic Index Diet
The gi (or glycaemic index) diet is based around the glycaemic index, a list showing foods and an indicator of the ease that the glucose and energy in the food type gets converted to sugar in the dieters body. The claim is that slow release foods (ie with a low Gi number), keep you feeling full longer and help you to take in fewer food without starving yourself. It is also very beneficial for people with diabetes, as the low GI types of food are beneficial in reducing surges in glucose amount. Foods containing lycopene (includes apricots, red peppers & sweet gourd) Lycopene is a natural compound and a member of the same family of phytochemicals as carotene. This chemical is responsible for the deep red color of a good number of fruit, vegetables and pulses. Intrestingly, unlike many other healthy agents, it does not degrade if cooked, rather it is really strengthened by being cooked. . Its most important nutritional contribution is that it is an antioxidant and is believed to help to lower the probabilty of cancer. Lycopene is the strongest quencher of singlet oxygen, which is linked with aging of the skin. It is also thought by nutritionalists to curtail the progression of diseases affecting arterial blood vessels. |
