Ingredients

4 medium artichokes
2 cl garlic, minced
1/2 tsp crumbled rosemary
2 tbsp lemon juice
1/2 cup water
1 onion, chopped
2 tbsp minced fresh mint
1/4 cup salad or olive oil
1/2 cup cider vingegar
1/2 tsp salt

Rinse artichokes and cut one inch off the tops. With scissors, trim off
the thorny tips of the remaining leaves. In a large saucepan, saute onion,
garlic, mint and rosemary in oil. Add lemon juice, vinegar, water and
salt. Place artichokes in seasoned broth; cover and simmer until tender -
about 40 minutes. Allow to cool in the broth. To serve, place each
artichoke in a bowl with some of the broth to use as a dipping sauce.
EXCHANGES: 1 artichoke with dipping sauce - 2 vegetables and 2 fat.
Carbohydrates: 20 gm, protein 2.8 gm, fat 14 gm, sodium 402 mg.

Diet types


The Glycaemic Index Diet
The glycaemic index nutrition and weightloss system is based around the gi index, a list showing food types and a score representing the speed that the energy of the food gets transformed to sugar in the dieters blood stream. The believe is that long-acting foods (ie those foods with a low Gi number), will keep you feeling full for longer and mean that you can reduce your consumption of food without feeling you are missing out.
It's also extremely efficient for diabetics, as the low GI foods are beneficial in preventing surges in blood sugar secretion.


The Atkins’ Diet
Originating way back in the 1960s, the popular atkins diet achieved most of its fame during the last few years. Although not accepted by all scientists, it enables weight loss but still allows you to eat many foods that would not be part of a normal diet, for example beef and eggs.
Unlike other diets, on the atkins diet you are encouraged to eat meat and fat, it is the carbs that must be avoided. It is referred to as a low carb/high protein, nutrition system.
With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, including cereals and pasta made from white flour.
Unlike other diets, on the atkins diet the foods you are encouraged to eat are still nutrient-rich unprocessed foods such as meat, fish and, as a consequence, poultry. You also can eat shellfish, regular full fat cheese, butter and, as a result, olive oil.

The Atkins’ Diet Theory
The logic behind the atkins diet is that even though our bodies use both fats and carbohydrates to burn into glucose, it is the carbohydrates which are burned first. If we cut down on carbohydrates, our bodies will use our fat and we will achieve weight loss. Although inviting, this theory is controversial, not all researchers are in agreement and some even hold that it might be dangerous.




The South Beach Diet
The South Beach diet is a diet created by Dr. arthur agatston which encourages that one should consume "good carbs" instead of "bad carbs" and "good fats" instead of "bad fats"
Agatston invented the south beach diet for people who have cardiac problems, as a consequence of his detailed analysis of scientific studies completed on other nutritional studies.
Good foods include, lean beef, chicken breast, fish, fat free cheese, peanut butter, lowfat milk and certain vegetables, like asparagus, cabbage and spinach.
