Ingredients
Nonstick cooking spray
5 cup diced eggplant - (1 med)
1 cup chopped green pepper
1 cup chopped onion
1 cup sliced fresh mushrooms
2 garlic cloves, minced
1/2 cup Estee Ketchup
1/2 cup water
1 tbsp red wine vinegar
1/2 tsp Estee Fructose
1/2 tsp Estee Salt-It
1/2 tsp dried oregano
2 tbsp sliced pimento-stuffed olives
1 1/2 tbsp pine nuts
Estee ranch-style snack crisps
= (or Italian bread)
Directions
Spray large skillet with nonstick cooking spray; heat over medium heat.
Add next 5 ingredients; cook, stirring, 5 minutes. Reduce heat to low,
simmer covered about 15 minutes.
Add remaining ingredients, and simmer an additional 30 minutes, stirring
occasionally. Cool before serving. Serve with Estee ranch-style snack
crisps or Italian bread. (Bread not included in nutrient analysis below.)
This recipe yields 6 servings. Serving size: 1/2 cup.

Weight loss dietsThe Atkins’ Diet First invented by doctor atkins in the sixities, the atkins diet achieved most of its fame during the last few years. Popular with many famous celebrities, it claims to allow fat reduction but still allows you to eat foods that are normally considered bad for diets, eg lamb and cheeses. With the atkins diet it is considered good to eat fat and protein, it is the carbs that must be avoided. It is often referred to as a high protein, low carb, nutrition system. With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, including cereals and pasta made from white flour. On the atkins diet the foods you are encouraged to eat are still nutrient-rich unprocessed foods such as meat, fish and poultry. You also can eat shellfish, regular full fat cheese, butter and, as a result, olive oil. The Glycaemic Index Diet The gi (or glycaemic index) diet is based on the gi (or glycaemic index), a list of types of food and a score representing the speed that the glucose and energy of the food gets changed to sugar in the dieters system. The believe is that long-acting types of food (ie those food types with a low Gi number), keep you satiated for longer and mean that you can reduce your consumption of food without craving snacks all the time. It's also extremely efficient for diabetes sufferers, as the low GI food types are useful in minimizing increases in blood glucose levels. The South Beach Diet The South Beach diet is a diet plan created by Dr. arthur agatston which encourages the consumption of "good carbohydrates" instead of "bad carbs" and "good fats" instead of "bad fats" Dr. agatston developed the south beach diet for his cardiac patients, as a result of his detailed study of scientific studies completed on other weight loss regimes. Examples of good foods include, canadian bacon, chicken breast, fish and shellfish, low or fat free cheeses, pecan halves, nonfat yoghurt and some vegatables, such as black beans, eggplant and sprouts. |
