Ingredients
1/2 cup milk, scalded
1/4 cup shortening
1 1/2 tsp salt
1 tbsp sugar
1/2 cup water, room temperature
1 package yeast
3 cup flour, sifted
4 tbsp white cornmeal
Directions
Combine milk, shortening, salt and sugar. Cool to lukewarm by adding
water. Dissolve yeast as directed on package. Add to milk mixture and
stir well. Add flour and mix until a soft dough is formed. Roll out
on floured board to 1/4 inch thickness. Cut with a 3 1/2 inch round
cutter. Place on a baking sheet that has been sprinkled with 2
tablespoons cornmeal. Sprinkle tops of muffins with additional 2
tablespoons cornmeal.
Let rise in a warm place(85-90 degrees) until double in bulk-about 1
hour.
Bake slowly on a hot, ungreased griddle until brown, about 7 minutes
on each side. Split muffins, toast and serve with butter and
marmalade.

The Atkins’ Diet Although it originated back in the 1960s, the popular atkins diet is still one of the most popular diets today. Popular with many famous celebrities, it claims to allow fat reduction but still allows you to eat many foods that would not be part of a normal diet, like pork and hard cheeses. With the atkins diet you are encouraged to eat meat and fat, it is carbohydrates that need to be avoided. Because of this, it is known as a low carb/high protein, weight loss program. With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, including, but not limited to, cereals and pasta made from white flour. Unlike other diets, with the atkins diet the foods you are encouraged to eat are still nutrient-rich unprocessed foods like meat, fish & poultry. You also can eat shellfish, regular full fat cheese, butter and olive oil. The Atkins’ Diet Theory The theory of the famous atkins diet is that although our bodies use both fats and carbs to change into glucose and energy, it is the carbohydrates that are burned first. If we take in less carbs, our bodies will utilize our stored fat and we will diet successfully. This is the bit that is divisive, not all researchers accept this as true and some think it might be risky. |
