Ingredients
1 package frozen chopped spinach - (10 oz), defrosted
2 tbsp red wine vinegar
3 garlic cloves, minced
1 tbsp minced fresh mint
1 cup low-fat sour cream or non-fat yogur, excess liqui
drained
Directions
Drain excess water from the spinach by placing it in a sieve and using the
back of a spoon to press out all the water.
Combine the remaining ingredients in a small bowl. Mix well. Add the
spinach and mix well. Serve with an assortment of raw or lightly cooked
vegetables, whole-grain crackers, breadsticks, or pita wedges.
This recipe yields 12 servings. Serving size: 2 tablespoons.

Lycopene superfoods (includes guava, red peppers and tomato sauce) Lycopene is a naturally occurring compound and a member of the phytochemical group known as 'carotenids'.
