Ingredients
1 tsp extra-virgin olive oil
1/4 lb 97% fat-free ground turkey
2 tbsp chopped onion
2 tbsp dry bread crumbs
1 tsp dried parsley
1/4 tsp thyme
1/4 tsp tarragon
Freshly-ground black pepper, to taste
1 egg white
1 tbsp flour
Directions
Mix together all ingredients except the oil and flour in a small bowl.
Form the turkey mixture into a 3/4-inch thick patty. Heat the oil in a
small skillet over medium heat.
Dredge the turkey patty in the flour and place into the skillet. Cook for
about 5 minutes on each side, or until the juices run clear when pricked
with a fork. Do not overcook.
This recipe yields 1 serving.
Exchanges Per Serving: 4 Very Lean Meat, 1 1/2 Starch, 1 Monounsaturated

The Atkins’ Diet
Now nearly 5 decades old, the popular atkins diet achieved most of its fame during the last decade. Although highly controversial, it enables weight reduction but still allows you to eat many of the foods you love, for example pork and hard cheese. On the atkins diet it is considered good to eat fat and protein, it is carbohydrates that need to be avoided. It is referred to as a low carbohydrate, high protein, diet system. With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, including, but not limited to, cereals and pasta made from white flour. Unlike other diets, on the atkins diet the foods you are encouraged to eat continues to be nutrient-rich unprocessed foods like meat, fish & poultry. You also can eat shellfish, regular full fat cheese, butter & olive oil. Brassicas, Wonderfoods that aid Dieting (includes Cauliflower, Boiled potatoes, Turnips and Daikon) Known as cruciferous vegetables, these are jam-packed with vitamins (eg.folate), minerals (eg. potassium and selenium), fibre, chlorophyll, antioxidents, isothiocyanates, and indole-3-carbinol. Amongst numerous other beneficial effects, some of these nutrients are thought by experts to help reduce the cancer risk in those prone to it.. |
