Ingredients

=== TURKEY AND SWEET POTATO PATTIES
Refrigerated butter-flavored cookin, as needed
1 small onion - (4 oz), finely chopped
1 cup mashed cooked sweet potatoes
1 1/2 cup minced cooked turkey
1/4 cup egg substitute
1 tsp grated orange rind
1/4 cup walnuts, finely chopped
6 cup mixed baby greens

1 navel orange - (8 oz), peeled, segmented,
and chopped, plus any juice from or
1 Granny Smith apple - (8 oz), cored, chopped fine
1 scallion, white part and 2" green, chopped
4 oz red bell pepper, minced
2 jalapeño chile peppers, seeded, minced
1 1/2 tbsp fresh lemon juice
3 tbsp olive oil
1/2 tsp salt, (optional)
1 packet sugar substitute


Directions

Lightly coat a large nonstick saute pan with cooking spray; add the onions
and cook for 8 minutes, stirring occasionally, until they begin to color
and are reduced by a third.

In a large bowl place the mashed sweet potatoes, cooked onion, turkey, egg
substitute, and orange rind. Mix well.

Place the chopped walnuts on a sheet of waxed paper. Form the
potato-turkey mixture into 8 small patties and lightly coat with walnuts
(the nuts will not totally cover the patty surfaces). Place patties on a
waxed paper-lined baking sheet; cover with foil and refrigerate at least 3
hours. Wash and chill the greens.

While the patties are chilling, combine the chopped orange and any residual
juice, apple, scallion, red pepper, jalapeños, lemon juice, olive oil,
salt (if using), and sugar substitute. Stir to combine and set aside.

Just before serving, lightly coat a nonstick skillet with cooking spray.
Saute the patties over medium-high heat, turning once, until the walnuts
begin to brown and the patties are cooked through.

To serve, divide the greens between 4 plates. Place 2 patties on top of
each and top with 1/4 cup of the salsa. Pass the remaining salsa in a
small serving bowl.

This recipe yields 4 servings.

Exchanges Per Serving: 2 Lean Protein, 3 Carbohydrate (1 1/2 Bread/Starch,
1 Fruit, 1 Vegetable), 2 Fat.

Nutrition Facts: 411 calories (39% calories from fat), 22 g protein, 18 g
total fat (2.8 g saturated fat), 43 g carbohydrate, 8 g dietary fiber, 40
mg cholesterol, 98 mg sodium.

The South Beach Diet
The South Beach diet is a weight loss system started by Miami-based cardiologist arthur agatston which encourages that dieters should eat "good carbs" instead of "bad carbohydrates" and "good fats" instead of "bad fats"
Agatston developed the south beach diet for people who have cardiac problems, as a result of his detailed study of scientific data on other weight loss studies.
"good" foods include, lean cuts of beef, turkey breast, fish, mozzarella cheese, peanut butter, lowfat yoghurt and certain vegetables, like lentils, collard greens and snow peas.


The Glycaemic Index Diet
The glycaemic index nutrition system is based on the gi (or glycaemic index), a list of food types and a score illustrating the rapidity with which the carbs in the food gets converted to sugar in the dieters bloodstream. The claim is that slow release food types (ie those with a low Glycaemic score), keep you satisfied for a longer period of time and help you to eat less food without craving snacks all the time.
It is also beneficial for individuals with diabetes, as the low GI types of food are useful in managing rises in blood glucose amount.


The Zone Diet
The Zone diet is a nutrition and weightloss system initially detailed by Barry Sears in a series of books, publications and an associated website. The Zone diet isn’t distinctly a fat reduction diet, however many zone diet followers find that they manage to lose body weight by following the zone diet.
The supposed science behind the Zone Diet is that if one can control the levels of insulin and glucogen (two hormones produced naturally by your body), then your body releases eicosanoids which, as a consequence puts the body in a state of balance which is more wholesome than normal, known as the 'zone'.
Sears believes that a body that is in 'the zone' is working at its best and, because of this, doesn't need to build up stores of fat.
The main procedure of the zone diet is to keep tight control over the precise ratio of carbohydrates to proteins, and to ensure your diet has high levels of Omega 3 fish oils.


The Atkins’ Diet
First invented by doctor atkins in the sixities, the atkins diet achieved most of its fame during the last few years. Although highly controversial, it allows fat reduction but still allows you to eat many of the foods you love, for example pork and butter.
With the atkins diet you eat protein and fat, it is the carbs that must be avoided. It is referred to as a low carbohydrate/high protein, diet.
With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, including cereals and pasta made from white flour.
With the atkins diet the foods you are encouraged to eat continues to be nutrient-rich unprocessed foods like meat, fish and, as a result, poultry. You also can eat shellfish, regular full fat cheese, butter and, as a result, olive oil.

The Atkins’ Diet Theory
The 'science' behind the atkins diet is that although our bodies use both fats and carbs to transform into carbohydrates, it is the carbohydrates which are burned primarily. If we reduce your intake of carbs, our bodies will consume the fat we have stored and we will reduce weight. This theory is controversial, not all nutritionalists are in agreement and some believe it can be hazardous.
